Parking on pub carpark and not aware I had to register.

In February I visited a pub I had never used before. I bought drinks and left the pub without either noticing or being told that I should have registered my No plate at the bar. The pub is not in a town, just a little pub on a main road.
When i received a PCN I immediately went back to the pub and saw the manager. I have the receipts for the drinks I bought with the time and date on them which correspond to the ticket. The manager remembered me and said that he would sort it out with the Company.
I appealed and sent the evidence to the appeal. They keep adding on sums to the original fine despite the fact that the appeal was ongoing. Its not usual in the area where I live to enter a No plate in a pub and in fact this is the first time that I have ever come across it, although I've since been told its common practice in some parts of the country.
If I had parked illegally I could accept that I would have to pay but this seems like a complete rip off.
Any advice please.

Thanks for reading my post but I don't understand what it means - NEWBIES thread 4th post? I've not used this site before. Been back to the pub owner who has been trying to cancel it. The company is called Civil Enforcement.0

Study the signature in the reply by coupon mad, the newbies sticky thread is usually 6 down from the top of the forum, so above your thread, it should have been read first, before posting, so study posts 5 & 4 ASAP
CEL are not going to cancel the PCN, so whether you contacted the pub once or ten times, you need to get them, or the actual landowners themselves, to cancel this PCN, getting the dog to wag the tail , so MUST cancel it, trying is only a part action, its the results that count
If you don't, CEL are likely to issue a court claim in the future and you will have to put in a great deal more work
So a complaint and cancellation ASAP, to the pub and the brewery chain, no coming back saying that you have already done it once, the squeaky wheel gets the oil, sitting back is just waiting to be sued in civil court, we see claims every week, especially by CEL recently1 -
