Wages not paid

I recently left my job had final payslip sent to me with correct hours worked, boss is withholding wages saying that I am in breach of contract for notice, am I right in saying that she cannot withhold work carried out but can withhold holding owed extra

Without anything in writing about notice periods, only statutory notice would be required to be given. That would be one week, assuming you had been employed for one month.

Nothing, not even a p60 in April, nest payments not paid, worked 7 days after notice given even trained up replacement0

Ask for the evidence of the contract you have breached and speak to ACAS.0

I'm no expert, but I'd guess a Letter-Before-Action stating that you dispute breach of contract, giving a reasonable time to pay. the size of your employing company is not relevant to whether you can belong to a union.
It may be that it is even more employment in a small company environment.3
