I gave Everest £7500 for a deposit on a conservatory. Now I have a debt collector employed by Anglian chasing me for money - no idea why they think I would owe them anything. I have had no contact from Anglian other than to say they are not dealing with the conservatories as that side of the business, while insolvent, had not gone bust. This in spite of me paying Everest 2020.
Absolute scam merchants, obviously got our details and think they can shake us down, could I sue them for my £7500?
I am £7500 down and now have a debt collector with a bad reputation chasing me - how can that be allowed.

I'd suggest focusing on seeing off the debt collectors rather than contemplating suing, at this stage at least - if you have no idea why they think you owe them anything then ask them to prove it.
What does "This in spite of me paying Everest 2020" mean - you surely didn't pay a deposit four years ago?0 -

Has conservatory been installed?
Did you fully pay for the windows that were installed & this is what they are chasing?

I have no idea whether Anglian will take the conservatory business or whether I have definitely lost my £7500. I am only glad that I kicked off on Trustpilot and got my windows in, they had been stalling since January, yet when the windows arrived it showed they had been manufactured in December so no idea why they messed us around. They did apologise, but now I have windows with no warranty, not even the FENSA certificate was completed, which they had time to do - they were incompetent but obviously knew they were going bust.
It's incredibly distressing to lose this amount of money, we paid via bank transfer as it was so much, so I think we are stuffed.

Given the amount at stake, and that you paid by bank transfer, it might be a situation where you consult a solicitor. Some local firms offer free, short consultations so you can establish if they can help and if the costs make it viable.
Edited to add: Have you paid in full for the windows that were installed? That's a separate matter from the conservatory deposit. If you hadn't paid in full when Everest went bust, then presumably that's what the debt is. If that's the case, you can't wriggle out of that on the basis that Everest went bust - you still owe the money.0
