Hot Water Dispenser Advice

Hi there.

I am after a hot water dispenser but, having done a bit of research, I am a bit confused by the vast array available.

My only real requirements are the following:

1. Avoid plastic, wherever possible, for safety reason - my last couple of kettles had glass sides for this reason.

2. A lot of dispensers seem to have predefined dispenser amounts but that will not really work as we have different sized mugs and people have different amounts of milk in their coffee etc.  Unless I have misunderstood how this works, in practice, I would prefer one whereby it keeps providing hot water until you manually tell it to stop.

Any advice on what models to consider would be very much appreciated.

I thought a hot water dispenser was like a coffee machine that just does water.

That's what came up with Google.

I don't see the difference between them and a kettle unless it's a huge one for entertaining so couldn't answer.
