The new contract issued by the LL does not matter. Legally, you DO NOT have to sign it. They could send you a new document every day if they wanted, but until you sign it is just scrap paper. You already have a signed contract which is legally valid. The LL cannot change this contract unless you both agree. If you do not agree, then it cannot be changed.
When the fixed term of your current tenancy agreement ends (eg. your 6/12 month period) you move onto a periodic tenancy as you already know. This is still a valid tenancy. There is no legal requirement for you to sign a new tenancy agreement unless you want to. If you do not agree with the new proposed terms, simply don't agree to them. Do not pay the new rent as this can be interpreted as you accepting the new terms.
Until you sign a new contract (and again, I stress that there is no legal requirement for you to do this), the terms of your current tenancy agreement are what matters. Your LL is bound by them, and if they want to increase rent (or evict you) then there are set processes they have to follow. Until they follow the correct processes, then simply do nothing.
