We did an extension on their house 3 years ago to accommodate me & my child, on the understanding that when I get my divorce settlement, it gets paid to my parents.
Will UC see this as the debt it is? What evidence would I need?

I don't understand why you started another thread on the same subject when you have one here. https://forums.moneysavingexpert.com/discussion/6518623/divorce-settlement-on-universal-credit#latest It gets very confusing when starting multiple threads on the same subject.
There could be issues with paying back parents, unless you have a document of proof that you borrowed the money to start with.2
