When obtaining quotes for home insurance you have to state what type of property you want to insure for example ours is a mid terraced house but we've got an extension on the back of the house which isn't attached to the adjoining properties on either side. There isn't any option to declare this when getting a quote so can I assume you don't have to?

Your property type is terraced. I don't know whether you're asked to declare whether you have extension/conservatory but if you're in any doubt over what needs to be declared, you should speak to the insurer.
To make the quote process easier, insurers tend to make some assumptions about your property. You need to ensure these assumptions are correct in your case.

Under the rules of CIDRE consumers are only expected to answer the questions to the best of their ability. They are not required to offer up additional information that they think may be relevant unless it's in response to a specific question.
Your home is a terrace, the fact there is an unterraced extension isn't relevant unless possibly it's double the size of the original house. All you need to do is include the rooms in the extension in the room counts if the insurer asks how many bedrooms, reception rooms etc.0 -
