    I think celery, onion and carrot have a name when used together and its referred to as the holy trinity. I'm sure I saw that green pepper was substituted when there was a celery allergy.  
    I'm sure it will taste great anyway.

    Red peppers (roasted or not as you please), leeks and basil.

    Soffrito in Italian, mirepoix in French and the Holy Trintity is the one with green pepper, used in gumbo and the like...A tip [proponents of authentic roux will be horrified by] but if you don't have time to cook the roux properly for a gumbo, cook some flour in the oven and keep it in the freezer for helping partway to that.

    That sounds excellent.  I've never managed to make tomato soup.  Do you peel and deseed before cooking or just sieve it after cooking the tomatoes?
