We’ve done several cruises. I don’t think there’s a blanket ‘best time to book’.  An unusual itinerary is likely to sell out quickly with no price reduction whereas common itineraries from multiple operators might offer good discounts.
However if it’s a special occasion or involved long haul flights, I wouldn’t mess about. Find a cruise you like & book it.
For example I’ve just looked at the same cruise around NZ we did in Feb 2020. From Sydney around NZ
13 nights, 1st & 22nd Feb £1804 for similar Mini Suite & 8th Feb fur £1698 but cabins are either fwd or aft rather than midship. Those prices don’t include drinks but again PM me if you want more info.
I doubt they’ll reduce those prices but might have an offer which includes drinks. Not sure I’d chance it though if that cruise fit my requirements.

Thanks very much.  I think we will book it very soon.  Not interested in a drinks package really, I don't think we'd use it very much so not worth it.
