I think that you may be better with the 'Surface Recovery Image' rather than the standard one made by the media creation tool, but admit that I don't know for sure what the difference is and the standard one may be OK.
Since Windows 8 the Windows licence is a 'Digital Entitlement' stored at M$ and basically tied to the motherboard, so just replacing a drive has never been a problem for me. When I've reinstalled Windows, even from scratch to a new blank drive, it just picks up the existing licence without you having to enter a key
You are always nervous the first time doing something like replacing a drive, and it's good to be cautious. Once you've done a few then it's nothing special.

Thanks! That's helpful with the licence. I'll look into the Surface Recovery Image. The forums suggest issues in some Surfaces with a Gen 4 SSD, so I'm going to stick to Gen 3, possibly: https://www.dell.com/en-uk/shop/dell-m2-pcie-nvme-gen-3x4-class-35-2230-solid-state-drive-512gb/apd/ab292881/storage-drives-media
