Within Lloyds Banking App, there is a facility to add other accounts, credit cards and other bank accounts to the app under open banking. If I were to do this, does that give Lloyds the ability to then look at my other accounts and transactions? Thanks

The basic answer to your question is yes; at the very least the data would pass through their systems to be seen in their app.https://www.openbanking.org.uk/faqs/

When you link an account through open banking you need to give explicit consent to share your data. Only the account(s) you link will be shared.
Haven't done it with Lloyds myself but the few times I've done it elsewhere it usually includes a fair bit of information, including your transaction history going back a fair bit in time. You'd need to read their privacy policy to know for sure, but the safe assumption would be that yes linking your accounts with Lloyds would allow them to see and process that data.0
