I have registered with Leigh Day and have put forward my case for a VW Polo SB65FRU.
I have been advised to provide them with copies of purchase documents. As I no longer have these, I have contacted the dealership where I purchased the vehicle. The dealership apparently has no proof of ownership for this car and are being most unhelpful.
Please advise how I can solve this issue or who else i can contact.
Thank you very much for your help in this matter

No surprise that the dealer hasn't kept paper work for a 2015 sale. V5 doesn't prove you are the purchaser, as it always says, it's not a proof of ownership.1 -

Your card provider / bank might have a record of your purchaseSam Vimes' Boots Theory of Socioeconomic Unfairness:
People are rich because they spend less money. A poor man buys $10 boots that last a season or two before he's walking in wet shoes and has to buy another pair. A rich man buys $50 boots that are made better and give him 10 years of dry feet. The poor man has spent $100 over those 10 years and still has wet feet.
