Changing Google account linked to NEST

Good morning,
First time poster here, I can normally be found on the OS boards. I am hoping someone can help.
We have a NEST thermostat at home. This is linked to my ex's Google email account. Every now and again, NEST asks me to sign in again on my phone. Although I have the email address and password (with his permission of course), it always need two step authorisation meaning he has to get a code texted to his phone. As you will appreciate this isn't ideal when we are not together anymore!
I have set up my own Gmail account for this very purpose, but have no idea how to change the email details registered with NEST from his to mine. I have done an online search but it talks about migrating Nest accounts to Gmail, which we have obviously already done in the past. It is just a simple change of email account.

Go into the nest/google app as him and go into the device and click to "remove" the item
Log out of his account in the nest/google app and log into yours
Physically go to the device and in its settings do a factory reset
Follow the new device setup instructions to pair it with your account.1 -
