At least you have more idea now of how it should be done.
The weak spot is the exposed brickwork on the inner reveal, which is at risk of penetrating damp and being a cold spot.

Very strange to me seeing the door frame attached to the outer skin and not the timber frame.

It does seem very odd. We have only had the house 5 years but we have the paperwork from when the windows and doors were all replaced in 2004 and all windows are in the frame but the two sets of French doors are set back.

The floor is shaped that way in both rooms.

Were they set further forward so the doors would open right back?

Yes both sets originally opened up 180 and were not put in by us but had been in since 2004.
We thought their positioning was causing the cold bridging we were getting so wanted new doors set a bit further back and the builders words were being the doors in, open up the reveal and insulate it… didn’t realise they meant stuff pir in the cavity and be clueless about how that’s just not a good idea in a timber frame.

It looks nice before we start ripping the thing to shreds again but gonna need a builder for that as hubbys an IT guy and I’m not good at DIY.

No Essex builders here want the job??
