"on eligible purchaseS" is very clear to me.
Otherwise it would be "on an eligible purchase"

  • Total, can be 250 £1 purchases if need be!

Note the term “purchases”, not the singular “purchase”. This is a common offer type amongst credit cards.

So it can be the purchase of several items, as long as total more than £250 in John Lewis, it will be eligible.

There are only certain items eligible. I haven't looked at the website but I'm assuming, for example, Sale items would be excluded. You need to check which items are acceptable for the offer.

So I can purchase: £150 on 26th December for eligible item, and then £100 on 28th December for Eligible item.

Total is £250 on eligible items will be fine.
