PCN - Grace Period

Morning all - I posted on here a couple of years back about an appeal and eventually it went to court and I lost so not over-optimistic about this one but I'll ask opinion on here.
PCN is from New Generation (IPC Member)
Me and the missus entered a car park on 9th Dec this year.
Dark and vile weather.
Couldnt find a space (I drive a Transporter) but eventually did.
It was for her 40th birthday.
She wanted 5 mins to do her makeup in the vanity mirror.
We left the vehicle, slowly as she had heels on and at the end of the car park was the machine and the sign.
There was a barrier next to the sign as the entrance to ANOTHER car park.
It was pitch black and I had to get my phone torch out.
It was the most confusing sign ever.
It was dark, windy and raining as I said so I took down the 5 digit Pay By Phone code and planned on paying when I got to the bar.
We walked 5 mins to the bar and sat down.
I got my phone out to read a message that the friends we were meeting had swerved the bar and headed straight to the restaurant due to the weather.
I told my girlfriend to wait and I would grab the van.
I ran to the van, left the car park, picked her up and we went a little down the road and parked in the restaurant car park.
Total time was 19 mins - 19:04 to 19:23
I've gone to appeal online and I cannot appeal online unless I tick a box that admits that I was the driver.
I've seen posts saying NOT to send a letter as well.
What do I do here?
Just admit I was the driver and explain the circumstances?
19 mins is specified on the letter.
Surely that's an acceptable grace period?
There is NOTHING else in the area apart from this 1 bar.
Would a judge really punish me for this and take the parking company side?
They want evidence on appeal.
I can take pictures of the sign in daylight and in darkness and also the fact that the payment station is right next to an automated barrier to a DIFFERENT car park.
It also gives me 21 days to appeal beginning with the day after that on which this notice is given but says at the end "N.B. Providing your appeal is received within 14 days we will freeze the charge at the discounted rate of £60". So do I have 21 or 14 days?
