Hi,
I have 1.8kg of stewing beef (Costco) in the freezer. Rookie mistake instead of portioning the meat I froze the whole tray.
So I'm going to defrost it and have a batch cooking session on Thursday. I've got an online shop coming tomorrow so can add any ingredients I need.
Looking for idea's of what I should make and how far it will stretch? We prefer stews, pies and casserole type meals - winter hearty meals. Lots of freezer space. Don't mind individual portions as well as meals for 3.

It probably depends on how much meat you like to have - I'd ballpark between 50-100g per portion (depending if there's another source of protein like pulses)I'm not an early bird or a night owl; I’m some form of permanently exhausted pigeon.2

I'd do steak and ale with most of it and then portion... you can keep it as a stew or put into pastry to make it a pie (or a stew with a hat if you don't like all round pastry)
Not a fan of him normally but James Martin does a very nice recipe, originally it was always listed as using Black Sheep Ale but for some reason its changed to "beer" in most instances of it now... they do 2 hours cook for 2kg of shin but low and slow the longer the better (PS. always adapt recipes a bit)3 -
I’d divide into three, do steak and ale, steak in red wine and an old fashioned steak and kidney. Allowing around 125g of meat per portion, that means each variety gives you 3-4 portions.2
