Why are people thinking you have to pay just because debt demands arrive threatening court?

Clearly it bears all the hallmarks of a scam.  You don't just pay scams to make letters go away.

There's no CCJ risk as long as you don't move house and not tell them, thereby missing letters which may well include a court claim form, which is easy enough to defend and doesn't risk a CCJ (unless you ignore or miss seeing it).

This is no different from the scam of private parking firms and there is NO REASON to pay just because some third party is adding fees and threatening court.  Court is a GOOD thing!  With rogue operations like this, court is the only real dispute resolution you'll get.

As for exposing what looks like a scam:  get it on Watchdog.  Contact them online.  This is something they'll feature if they get enough complaints raising it.

I dont know if this post is still current but it looks like it is the standard business model for VARS Technology. I called into an Esso garage on a motorcycle and bought and paid for £16 of petrol.I received a drive off notice for £15 worth of petrol alegedly taken by another motorcycle (photograph provided) two pumps down at the same time. The 'offending' motorcycle wasnt the same model or colour, and because it was facing the camera there was no number plate visible, I pointed out to VARS it wasnt me or my vehicle that I was filling up at a different pump at the same time and I had a actually receipt for my fuel. I gave them photos of everything, I thought they might work out they had made a mistake but they werent interested. By the time they had added on multiple charges they had got to £254 so now I have to go to court to sort it out.

Don't forget to ask for your costs to be paid when you win. Transport, time off work, time working on the defence, stamps, photocopying/printing, all of it.

Do you actually have a court claim form from Moorside Legal or QDR or similar anti-consumer bulk litigation monster? Show us the POC please.
