Paid , displayed still received the fine

I have parked in the Peterborough car park. Paid my ticket, entered my reg number, put my ticket on the dashboard.
3 weeks later I received the letter saying I didn't pay and I can appeal by sending them an evidence of my payment. There is no way you can talk to the person - just filling the form and receiving the automatic replies.
I paid by cash, as card payment option wasn't available at their machine (simply didn't work). Paid by coins, which machine kept rejecting but eventually all got paid.
Of course I didn't keep the ticket - as far as I was concerned, I paid, displayed, I don't need it anymore.
I absolutely have no idea what can be done, as I am not guilty of anything here. Please advise. Thank you
