Changing kitchen tap

Hello
I am attempting to change for the first time the kitchen tap but I struggle to work out the plumbing under my sink.
Based on the all youtube videos I watched so far I should be attaching flexi hoses just above the valves but as you can see there are some other pipes attached to them too so I can't simply remove them. Does that mean I need to attach flexi hoses to those connectors connecting pipes from the current tap to rest of the paperwork? If so do they just simply screw/unscrew or some soldering is required?

Cut the cold above the T and use a 15mm compression joint to the tap flexy. Have you got the tap yet ? They sometimes come with a female 1/2 BSP so you will need a 15mm compression to 1/2 BSP male adaptor. https://www.screwfix.com/p/flomasta-compression-adapting-male-coupler-15mm-x-1-2-/69358

The valves at the bottom are for appliances (WM, DW). In the photo I don't see any isolating valves for the tap and it's not clear where hot water comes from. Some extra photos can help:
- bottom of the sink and the tap - use front/selfies camera if you use a smartphone
- pipes to the left and to the righ as far as possible
