Are there any services to redirect a call to mobile number to skype? I'll also need to make calls, so was planning to get a skype package for that.
With our VOIP provider you can set the caller ID to be the same as any phone number you own elsewhere so I can call using VOIP but the receiver of my call will see it as if I was calling from my mobile.
This is useful, allowing the recipient of the call to see who is calling. I use the messaging app Viber in this way, which displays to the called party the phone number associated with the Viber account

With mine I can choose if they see my VOIP number or my Mobile (having paid a small admin fee to add my mobile number to their system). Back when I did more international work I had VOIP numbers for different countries so if phoning the US I'd use the US callerID so that the recipient didn't wonder who this foreigner phoning them was/it must be a scam etc.

All the VOIP numbers accept inbound calls but obv the mobile goes to my mobile not the VOIP

WhatsApp calling is good and charges to data, so a data only eSIM would work. Downside of using your phone with data only is if you need to make calls to people without WhatsApp eg phoning a local takeaway order.
It's certainly a limitation but when in Latin America I ended up having to install WhatsApp as lots of restaurants/takeaways etc only published a WhatsApp Business number and you had to message for reservations etc.

If your phone supports eSims I've found the Aeralo app superuseful. Used it in a few countries now. There are various sign up offer codes online to encourage you to try the service, if you Google them.
