I have just bought some for xmas day. How do you use it to make roast potatoes, usually I use hot oil. Does it get hot enough to use it for yorkie puds

Hi,
I use goose fat for the roast potatoes (and raost parsnips, yum). You heat it on the pan until it is boiling hot and put the roasties in, I use it just the same as hot oil (just make sure it is all melted and hot before starting to put the potatoes in).
I then put a bit more on top of the potatoes about 10 mins before they come out, to give them an extra crispy, rich outer.

As previous person said - use same as you would any oil/lard - make sure its nice and hot then add the potatoes. You can always sprinkle with black pepper too. The goose fat does give them a lovely flavour.
Not sure how many you're cooking for but would put a good couple of large tablespoons of fat in tin, heat in hot oven, then add the spuds, baste and leave, baste again towards end. Add more fat if you think needed.

Hi, goose fat should get hot enough for yorkies as last year my oven got so hot my ceramic roaster actually cracked and broke in the oven LOL - goose fat everywhere!!!

It keeps forever in the fridge and freezes well too. We have a goose for Christmas which comes with a tub of fat and then there's all the fat that comes off during cooking. I save it all and use it throughout the next few months.0

Nigella uses gooses fat and shakes them parboiled in a bit of semolina before roasting , I'm trying this will let you know0
