    The carnation website as a range of non churn ice creams an example of which is this mango one and the condense milk is whipped with the cream.

  • Thinking about it some more, both the recipes I linked to are ones where you add a small amount of very highly flavoured juice to your cream/condensed milk/milk mixture so I think the ratio of water based ingredient to milk based one might be worth considering. If you look at this Nigella recipe for Bitter Orange Ice Cream you can see why I've come up with this theory. Perhaps it would be worth pureeing your mango and then reducing it in a pan before adding it to your mixture. Other things that occur to me are that you could add lime juice, lime zest and/or chilli or even amchur to the puree as well and then ripple it through rather than mix it in completely. 
    The bitter orange ice cream was my starting point a good ?20 years ago on the recommendation of a friend. Except I used some puréed strawberries and left some in bite size pieces - they were like icy bullets! 

    Water creates crystals as you say, so I was surprised that the lemon ice cream recipe called for milk. But then it is prepped just 3 hours before serving, and is whisked again just an hour before serving which would account for the soft scoop. 

    My stick mixer is getting on a bit now, but it has had very good use over the years. When I next try ice cream it will be with YS double cream and liquid glucose (I bought a couple of tubes this evening so am ready for when that time comes) and I shall whisk it in my bowl mixer, as yet unused.

    Totally me! I have the ingredients at home but have had a bit of a cookathon (very rare event in the Rosa Damascena household) so sadly not the freezer space.

    I see the bowl needs pre-freezing - indicating its not the machine that does the freezing, its the insulated bowl?

    Am looking forward to having lots of space in my freezer as I rid it of all the UPFs (pizza, savoury bites etc).
    I bit the bullet and bought this earlier. The promotional code for today's purchases over £25 doesn't seem to be working though?

    No matter, I shall be on the lookout for YS double cream now :)

  • I was sent this recipe over W'App this morning (first couple of minutes) - it never occurred to me that ice cream could be made with bananas only.     If you're not keen on bananas you can blitz equal amounts of frozen fruit ie berries with yoghurt (fat free works) for a couple of minutes and have instance ice cream.  I tend to make and eat straight away, it makes a soft ice cream.  I use plain yogurt or as I always have it in the house Greek yo it no recent why you can use a flavoured one

    I do this already in the summer and serve sprinkled with chopped nuts, but I don't refreeze as I know it will go as hard as a rock. Now I should be able to with creamy results.
