If the wiring damage is proven to be caused by an animal then you aren't covered by Toyota - its not a warranty, nor defect issue.
Toyota aren't to blame.
You are covered by your insurance, but you would have to pay excess and as such you might find it uneconomical to repair via this method. I would suggest finding a local repair shop and seeking a 3rd party opinion.

There seem to be several issues here all mashed up into one post.1. You ordered a car which was delivered late. They loaned you a car, is this issue now resolved? If yes, please delete from your very long post.
2. Your car developed a fault which the garage say was due to vermin damage. The garage has repaired this once free of charge.
3. You are claiming on your insurance for the vermin damage and are unhappy about the service you have received.
Is this summary correct?
The only comment I would make is that vermin can and do chew wires and other car components, ask your neighbours if they have heard of other cases. Google it, there are various home remedies to discourage this.0 -
Isn't the problem here that:
1. English isn't the Op's first language;
2. they are a new and inexperienced/naive driver; and
3. they don't understand how insurance works (particularly the excess)?0
