Does credit card interest continue to increase after death?

My father in law is terminally ill and we are trying to sort out his personal and business finances before he dies. We haven't got all the details as his paperwork is not in the best state but we do know that he will be leaving a considerable amount of debt in the form of overdrafts and credit cards. We know that all of this will have to be paid out of his estate (he owns his house) but knowing how long probate can take my question is:
Will the interest on these debts continue to rise during this time or will the debts be frozen at the time of death?
