Current Plusnet broadband with landline finishing soon - what are the options?
As I understand it , the PSTN switch off is scheduled to be completed by Dec. 2025 so many exchanges will lose the old system a lot sooner.
So what happens with FTTC, does the POTS service go at the same time as at the local exchange?
No. They aren't expected to totally remove copper lines for a long time as not everyone is going to get full fibre in the short term. FTTC will still work but any phone service will have to be VOIP. That's why there is a considerable degree of fuss about existing customers who have phone only - they will have to be provided with a very basic modem/low level broadband service to allow a phone service.

I wasn't expecting FTTC to go away any time soon, POTS is Plain Old Telephone System. What I didn't know is whether Openreach's FTTC still has analogue telephony going back to the exchange or terminates both signals in the street cabinet. If the latter there would be no big incentive to phase-out the phone service on such lines until FTTC is phased out. It doesn't sound like that is the case though.
