If I put eg £50 this month and £25 next will that count as the £75, or does the £75 need to be in one go? Thanks for your help.0

From my reading of it you would be fine doing that, but personally I would wait till you had the £75 and put that all in in one go because it mentions initial investment, you have 6 months from opening the account to make the deposit then you wait 12 months I think from the investment date not the opening date till they issue the cash back.
