Parking Eye charged me for being gridlocked in Asda Eastlands carpark

I did a late night trip there one night because we needed some baby formula, entered at 21:56 according to their camera.
Read the sign that said 3 hours max stay, thought that was plenty.
Spent about 45minutes in there, paid in cash and no longer have the receipt.
As we left we realised that a concert in the Man City stadium nearby must've just ended and now cars could not move. We ended up stuck in the carperk for over an hour with a hungry baby in the backseat and didn't get out of there until 23:53.
Total time in carpark was 1 hour 57 minutes and from researching online the max stay changes to 1.5 hours when events are on nearby.
I spoke to an Asda manager who said because I don't have a receipt Asda can't help me. I don't who else or how I might contact from an Asda POV. One gripe I have from Asda is the manager said they make announcements in the store when events are on and that there's sufficient signage, but there definitely wasn't! No proof though.
Can I get any advice on how to go about this appeal? It feels like a clearcut case but maybe it isn't! I've never played this game before and I don't want to say the wrong thing when I submit the appeal.
Any links to previous stuck in car park threads would be appreciated, although I understand PE have started prosecuting people in more recent years so a lot of the pre-2012 advice is out of date so recent examples would be best.

Are you a regular Asda shopper? Do you have past receipts or cc/bank statements to verify? Do you have an Asda credit card or loyalty card/app. Any of the above can be used as proof of you being a loyal customer. Take them with you when you go back in to see the manager again. If you have no local help, you should send a complaint to the Asda CEO. Escalate there.Can we see a copy of both sides of the letter PE have sent you. Redact your personal data, your VRM and any reference numbers, but please leave all dates showing.Please note, we are not a legal advice forum. Everything you have asked and need to know is in the Newbies/FAQ thread near the top of the forum. There is very specific information in there about PE PCNs.
Instead of contacting some minimum wage customer service bod in ASDA, try complaining directly to the CEO and make sure you remind them that they are equally liable for the actions of their agents. Complain about receiving an unexpected and unjust surcharge for being a patron of their store and you are are going to fight this all the way. Explain how much you spend a year with them and then multiply that by the number of your family and friends who also shop there and to weigh that loss of income with what they gain by having a parasitic, unregulated private parking company surcharging their customers.

Speak to the ASDFA manager again, and tell him that irrespective of you still having a receipt or not you were a customer ( did you pay by card/contactless?) and the vehicle was not parked but in the process of leaving, and ASDA should have been aware of the traffic issues around the site on that day and instructed their agents not to pursue any "contractual" parking charge notices as such "contractual " agreements that the un regulated aggressive and intimidating parking companies such as parking eye rely up on would be impossible to follow.As ASDA and the Store manager are jointly and severally liable for the actions of their agents you are instructing them that this - and other parking charge notices issued by the un regulated parking eye company are cancelled with immediate effect .Failure to do so may result in ASDA being charged for your costs, including time. And should a breach of GDPR be found, such as processing personal data without just cause - ASDA / the store manager should have been aware of the traffic issues. then this too may be investigated together with the personal liability aspect of GDPR where the director/manager may be held personally liable, as opposed to/in addition to the company (ASDA)From the Plain Language Commission:
