For a more accurate analogy it would be like going to ‘we will buy a car for you. Com’ tell them what you want, let them search for the car and sort out spec etc and then getting conformation as to the price depending on what they have sourced. 

As above if you go direct to the supplier and book a proper package you get to see exactly what you are booking on the screen as you go along. I booked a short break a couple of months ago with TUI, all the way through I could see the dynamic pricing for the room I wanted, the flights I wanted and also what transfers, if any, that I wanted. I confirmed I had the exact holiday I wanted and paid my deposit. I’m not particularly recommending TUI, I rarely use an agent preferring to book all the bits myself, but this was a quick extra short break and it was great to be able to play around with timings and room type and see immediately what my changes were going to cost.
