I think more important than the driving licence and registered keeper addresses, is any motor insurance you have - they'll not just need an address at which you can be contacted, but to know where you live (as that affects the risk from their point of view) and where the car is parked.

We did something similar. Changed driving licenses, went on the electoral roll, set up forwarding for the rest. The expected 3 months actually took 6 months, due to various issues, even though it was a fairly short chain (4 sales / purchases) and no one pulled out.

I would have thought you could move in on the basis of 'living with family' for a few months, no need for formal tenancy agreements etc.?'

You would need to notify DVLA and car insurers etc. of your new address as that's where you're living even if only for a short period of time.
