Android verson updates and security updates

I'm thinking of buying a pixel phone and I had a look on Google's website to see how long it will support all the various pixel phones for.
The pixel 7, for example, will get Android version updates until October 2025 and security updates until October 2027.
The security updates are important to me but I wondered if the Android version updates are also important? After October 2025, will I notice any difference on my phone? Presumably it will still be secure as it will keep getting security updates until 2027. I'd like my new phone to last me alot more than 2 years.

after 2025 your phone interface menus etc won't change, it will just get security fixes0
