Sorry if this post is a bit unclear but I am not very knowledgeable regarding this subject. We are wanting to remove our website completely as my husband has retired now, he was a tradesman. We pay a monthly fee for web hosting to Eclipse but I’m not sure if all we need do is cancel this or whether anything else is required. I seem to remember they use a hosting service called Plesk but it’s only Eclipse that we pay the monthly fee to.

If you stop paying for it it will cease at the next renewal date.Your domain name (the .co.uk bit) is probably paid up until the next renewal date, which depending on what you bought could be anywhere up to maybe two years away.1

The website presumably has some content, even if it's just contact details and an outline of what services are offered. Replace that content with a simple front page that gives the necessary info (retired; pls go away or whatever) and then contact the web host to tell them that you no longer need it, and check what their notice period etc is.
Stopping payment for something that has a contractually agreed payment period doesn't override the original contract, so your best bet is to check with Eclipse what your obligation is to them, and go from there.5
