Diabetic dog after spay

Our dog was diagnosed with diabetes about a month ago. Her levels were really high (in the 30's to begin with, and in the 20's the past couple of weeks. Her dose was started at 7 units then upped to 8) 
 We were advised to have her spayed as she would never get her levels right because of hormones. We had her spayed a week ago and been to vets today for a glucose check. They did it twice. Once was 2 and the second was 5, so both really low.
They have reduced her insulin by 1 unit and said to come back in a week.
My question is, what happens if the spay has regulated her hormones and her body is now naturally reducing her glucose levels, but we are still giving her insulin? Isn't this really dangerous? We don't test at home, so now we have to wait until next week to see what is happening.

    I don't think  that happens.

    Spaying  makes it easier to regulate the glucose levels rather than progesterone making it vary.

    Your dog's low readings were with her taking insulin.

    The vet has reduced the dose to find the optimum minimum dose.
