How to get this sort of finish on raw timber?

I see that and think reclaimed timber - maybe scaffolding boards - not starting from fresh, but old and darkened and then sanded and sealed to get the highlight effect you want.

I do have old scaff boards, and also some pallets to dismember, and these are the ones I hope to use.
But they vary a lot in finish, so I don't really want to preserve what they are, but get some level of consistency and colour. The counter in my pics look pretty spot on.
Lots of good links given, so I'm working through these. Using two stains - one dark, one light - followed by sanding seems to be the general way to go.
Time to experiment
