Last night we had mixed grains, rocket, broccoli, butternut squash, sweet potato and carrots with butter beans in a parsley and thyme cashew cream sauce - plenty of leftovers so we'll have the same tonight 😋

Been away for a city break and it was almost impossible to eat WFPB!! 🤦♀️ I'm not totally surprised but even the couple of fully vegan restaurants we found were heavily reliant on UPF's - I feel really sluggish and bloated as a result (the alcohol consumption certainly hasn't helped either!! 😳) so it was nice yesterday to have some decent food...
Lunch was rocket and black grape salad with balsamic, mixed grains with lemon zest, cannellini beans, roasted peppers and a cannellini bean and almond butter puree - it was absolutely lush and I was so grateful to feel full but not bloated 😋 I think it's going to take me a few days before I feel normal again and get all the rubbish out of my system but today was a good start! 😁

I'm starting to feel better following my week of drinking far too much and eating badly while away! I've done no asana practice for the last 10 days and that is beginning to make me feel antsy so I'll be back on it from Monday (we have a lot to do this weekend so I just won't have the time/energy) and I'm looking forward to it!
This month I have set myself a tiny food budget to help replace the money spent on the break away so sticking to the 'daily dozen' is going to be harder. I know that the next 5 weeks will not be strictly WFPB - I will be eating a lot from the freezers (both to save money and to clear them out) so some of the UPF'S in there will have to be utilised no doubt - but I'm going to try to make each meal as healthy as possible.
I'll do a meal plan once I've done the freezer inventory; breakfasts will mainly be apple oatmeal with fruit, nuts and seeds - I have a lot of dehydrated apples from last year which I will rehydrate and cook in cinnamon/spices in the instant pot each week to use in the oatmeal. Lunches will mainly be leftovers from the previous night and leaves from the garden, dinners will be from the freezers, storecupboard and garden. I think there are quite a few freezer surprise meals on the horizon!! 😳😂DNF: £708.92/£1000

Lots of freezer meals have been eaten - most have been reasonably healthy but today I just needed something that felt really fresh so tonight I had a salad with rocket, red grapes, pomegranate, blueberries, balsamic, mixed grains (rye, barley and oats) and lemon chickpeas 😁
