My car was damaged in a car park managed by eurocarparks.
there was a large white scratch down my drivers door when I returned, there was a white car parked next to me.

It was a very windy day
i left a note for the driver and her response was “I’m not aware that I damaged your car but if I have I’ll pay up, my son was in the front passenger seat but on this occasion I got him out via the drivers door’
The landowners said their cctv doesn’t cover the car park and Eurocarparks are not responding to my requests for access to cctv
what are my rights here?

You don't have a right to the cctv (unless you're actually in the footage - and that assumes it even exists).

I am in the footage as I parked my car there and the car park is covered by their CCTV0

But the footage with you in is going to be no help at all as you weren't there when the damage was caused. If the driver of the other car requested footage that might show her door hitting your car, but I wouldn't hold out any hope that she'll ask for it.

A "large white scratch down my drivers door" doesn't sound like a door opening "ding", suggests more of a moving vehicle type of contact.
You would have no rights to request or even view the footage, you could ask the car park operators to view but how much effort they will be willing to put into it, this is a long shot. Report it to your insurance company, they may have better leverage with the operator.

Your rights? To consult your insurance company and see what your options are. You have little evidence of fault, so it'll almost certainly be an 'at fault' claim, unless the other driver was guilty and confirms so.1

Was that car parked there when you arrived, or could another car/cars have arrived and left in the time you were absent? A static CCTV camera, unless it happened to be positioned to have a clear view of the movement of the relevant vehicles is unlikely to prove anything.
