I've managed to get the end cap off and I've attached some photos. Am I ok to unscrew that screw with the water on? Im assuming it just holds the top plate on and won't disconnect the cartridge?

Yes - it only holds on the handle. No water will be released.
I don't know if the temp override button will need pressing as the handle is pulled off. I suspect not, but hopefully the handle won't be too tightly fixed on the spindle, so it'll become obvious either way.0 -

Ok I have removed the screw but the handle won't budge. How much force should it normally require? Also should I be pulling the part with the temp number on or just the first part?

Needs a good tug, and might be better done by removing the whole bar mixer first.

Have you tried pulling it with the button pressed in ? it may be you need to get something into the gap and sort of lever the handle off. It may have some scale or something holding it on, or just be a very close push fit1

Would I be ok to spray some lime scale remover into the end where the screw is to try and loosen it?
