Samsung Health not liking the clocks moving forward?

So my Galaxy S20 auto changed time no problem.
My Galaxy Watch auto changed time no problem.
My Garmin watch auto changed time no problem
And when I look at the sleep info recorded by my Galaxy Watch when the clocks adjusted, there's a splodge around 2am.
All OK so far.
But now Samsung Health is recording data as though we're still an hour behind, both for sleep and when I do an activity.
So last night I go to bed at 10pm, it's saying it was 9pm.
Yesterday through the day I went out on my bike at 9am, it shows it as starting at 8am.
Had the watch 2-3 years and never had this issue before.
What gives?
And how to sort?

My concern (if factory reset is the only answer) is it's a foreign watch which didn't originally have Samsung Pay on it & 1) I can't remember how I got it on there and 2) I remember nearly bricking it in the process.

Well it seems it's very much like its owner - I'll sort it.... When I'm ready.
As just up this morning & it's recorded the time properly.
I hadn't done anything that might've changed anything.

My wife had a similar problem, but with a different watch. She handed it to me yesterday to try to sort it, and it corrected itself when I was looking at it. I hadn't even pressed any buttons!
