Still working through my potato mountain here. I have made up 6 potato cakes with potato left over from shepherds pies yesterday and sausage and mash today. They are in the freezer. Tomorrow we are having one of the shepherds pies, Thursday will be something quick before crib. Friday we will have chicken hot pot. I find that at this time of year some of the potatos go bad so would really love to make up things for the freezer so that they are not wasted. 3.5fl oz olive oil
2 large onions chopped
1 head garlic chopped
1tsp ground cumin
1tsp ground coriander
2 green chillis seeded and chopped
2lb potatoes peeled and sliced
Zest & juice 3 lemons
1.5pts veg stock
Sea salt
Heat the oil in a pan, throw in the onions, garlic and spices and saute for a few minutes. Add the potatoes, lemon zest and juice, stock and salt, bring to the boil then simmer for 15-20 mins. Drain off and reserve liquid to use as soup, serve.
I serve the potatoes with different bean dishes and make an olive loaf when I use the soup 😁DNF: £708.92/£1000

I haven’t officially joined the challenge this month but read along and still keep a track and I feel like this is a longer month?! Is it?! Or have I just spent more.We won’t make the month through without being over (we’re actually already over) but certainly not with a weekend before the next month starts. I've totally lost track of where I am this month but I'm still reading along and cheering from the sidelines. We have been eating from the freezer a lot this month as it really needs a defrost so i don't think we're doing too badly but I'll rejoin again in May and keep a better track.7

I'm spent up for the month but have found some random 20p, 5p and 1p pieces around the house & car so will be using them for emergency onions/garlic if necessary. Yesterday I'd defrosted some smoked salmon I'd got from Olio and made wholewheat spaghetti (from cupboard) with olive oil & capers (cupboard), frozen peas (Freezer), kale (Olio) and the salmon. It was really tasty and I've enough to have it again this evening. Breakfast was back to porridge with oats, milk, cinnamon and syrup I already had in. Lunch will be home made soup. I've some sandwich thins in the fridge that I've defrosted so I may defrost some more Olio sausages and have a sausage sandwich for breakfast tomorrow with homemade tomato jam from last year's allotment batch, home made soup for lunch then corned beef hash for dinner (with kale) as I've mash and corned beef slices in the freezer (Olio). I'm so grateful to Olio at the moment, but I am also really grateful for this forum as it's making me think about what I'm going to do with the random things in my freezer like a quarter bag of sprouts with bacon, half a bag of edamame beans, a small chicken breast (or it might be a deboned, deskinned thigh....). Looking forward to getting creative (or just covering whatever I make in lots of gravy made from gravy granules!)

Very fancy hot chocolate bought yesterday from a shop in High St Ken I kept telling myself I'd treat myself to once Lent was over - £5.95. Pain au choc on Monday morning (got up earlier and had toast as usual yesterday even though I was in the office) - £1.25, and £18.80 on groceries at the weekend. £87.52 left, which will include a pub lunch on Sunday, but not anything bought when I'm away the week after as I'm in Ireland with three of my aunts, and that's holiday budget.
