If it’s a UK passport issued before Brexit, then it’s still a non-EU passport, so you would be treated as a third-country national. In that case, yes — the 90/180-day rule applies for stays in the Schengen Area, and working legally would normally require a Portuguese work authorization.
Your holidays in Poland and Spain count toward the Schengen 90-day limit; your trip to India does not.
