Make sure you haven't signed anything taking away the 14 day cooling off period in exchange for them starting the process sooner.
I understand that may eat into (or all of) the OP's deposit depending upon how much it was and what's been done but requesting the service begin during the cancellation period wouldn't force them to continue with the full contract
