Parking Eye PCN - Kingston Park Retail Park Newcastle

Hello,
Just wondering if anyone would be able to lend a helping hand fighting a PCN from PE. I notice another post from 2014 regarding Kingston Park in Newcastle but aware some things might have changed since then.
For info the retail park is made of 4 car parks all run by PE. I parked in Car Park 1 purchased from a shop there, then walked to the next car park to purchase from two shops there. My partner then went to his opticians appointment in car park 3, which we met at afterwards. At this point we had come up to 2 hours parking and the signs read 3 hours limit (I remember checking then checking online banking to check what time we'd paid at shop #1). We walked back to car and popped in one more shop to make final purchase then left. PCN is for parking over 2 hour limit at 2 hours 30min. I have photo of signage on day, all receipts and bank statements.
Any advice much appreciated!
