Should I pay my euro car parks parking notice?

I took my family out for dinner on Christmas Eve and parked in a "euro car parks" car park. Being Saturday night and Christmas Eve, I paid £1 for the parking (I also have the ticket). Today I received a parking charge notice stating that I had overstayed. I had another look at their charges and I should have paid £2.80, but for some reason I thought it was £1 at the time. An oversight on my part, but I've been slapped with a £100 notice, reduced to £60 if paid by 13th Jan.
The notice says I can appeal, but I have to do that in writing or online and they will reply within 35 days.
If they say no, will I then have to pay the full £100, or should I just pay up now the £60 now?

No.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).

Of course you should not pay, it is a scam. Read the newbiwes thread and complain to your MP/You never know how far you can go until you go too far.1

The reason that you may have thought that it was £1.00 is because there is ambiguity in some of Euro Car Park's signage especially when parking in the evening.
If you still have your ticket check it with the signage because the tickets and the signage don't always tell the same story. There are also issues with paying by app,

There has been a number of issues with a car park that is local to me. This car park is now operated by Euro Car Parks. A forum was set up as a result of issues with the previous operator. The new operator (Euro) does not seem much better
An administrator on the forum tested all three parking apps for the two car parks by trying to book 12 hours parking from 9.30 am on a Sunday.
Euro's Sunday tariff is 7am to 7 pm for £1 and then 7pm to 7am Monday morning for another £1.50, however, it's impossible to book this all in one go. Worse that that, PayByPhone have actually got it wrong and ask for £1 (plus 20p) to park until 7am Monday morning which would get you a PCN.
Paying by app on these Euro Car parks appears to be a bit of a dog's breakfast.

Euro Car Parks definition of all day parking is not all day. I would assume that all day meant until midnight. Euro's day finishes at 19.00 on some of it's car parks.
I have seen Euro tickets that say that they are for all day but they are not for all day. They expire at 19.00 and then you would have to buy another ticket. I don't know how you would do that if you were out for a meal or at the cinema or theatre. You would have to faff about with an app but that's not easy.
Which car park was it?
