All bran tea cake with winter spices

This is an old one and I have tried searching.  I’ve not been on here for eons, but I used to be a regular contributor.  I went to start my Christmas baking with an all bran cake where the fruit and such is soaked in tea and has mixed spice and otherwise er spices mixed in. I have been told it’s like dumpling cake!
 Now, I have found a more recent one where the fruit etc is soaked in milk. But I am looking for an older recipe using the tea and spice.
I was making it a lot and I knew the recipe but due to circumstances outwits my control, I haven’t made it in a while and I’ve forgotten the amount of spices to put in.
Im hoping that one of you super techno seniors can point me in the right direction 🙏

    I think you should be ok with a tsp of cinnamon and half an all spice or a teaspoon of mixed spice, as long as you don't go too crazy with the cinnamon which can be bitter, I would just heave in what you fancy.

  • Thanks -taff, that’s roughly what I tried last night, but it just didn’t have much taste. I know that I got it from this site, I just can’t find it …. yet.

    Here is the all bran loaf recipe that I used to make loooong ago!
     No spices mentioned- I would be inclined to use ginger, cinnamon & touch cloves

    1 cup each of dried fruit, brown sugar (really? seems a lot), all bran, milk.
    Soak for one hour at least
    Add one cup SR flour
    Stir well
    Greased 1lb loaf tin
    Bake gas 4 for approx 1 hour
    Serve with butter
    Freezes well.

  • Today I made a tea loaf in the slow cooker and it is amazing! Would make a lovely alternative to Christmas pudding. 

    375 gram dried mixed fruit
    250 mls of hot tea 
    50 gram butter or margarine
    100 gram light brown sugar
    1 medium egg
    225 gram self raising flour
    3 teaspoon cinnamon

    Soak the fruit in the tea for a couple of hours (or overnight). Then mix the egg, butter and sugar together, then add the flour and the fruit and tea mixture. Line the slow cooker with parchment paper, and I cooked it for about 2 hours. 
  • What size/shape slow cooker did you use?  I really like the sound of this, but I have two slow cookers of very different sizes!

  • What size/shape slow cooker did you use?  I really like the sound of this, but I have two slow cookers of very different sizes!

    It was a medium size oval shape slow cooker (2.5 litre I think). If you do it in a very large one it will come out too thin and flat and if you make it in a tiny one it might raise the lid! I suppose you could adjust quantities of ingredients.

    If you cook it in a large sc you can put the mixture into a loaf tin

    Not advised to make cakes in a very small sc as they are liable to burn
    the baking queen website that I quoted above is excellent for hints & recipes

    Thank you @jojo700 - I followed your recipe to make a tea loaf for my father's birthday on New Year's Eve. It took about 4 hours in our slow cooker on the low setting - did you cook yours on low or high?

    I also forgot to add the cinnamon but it still tasted very nice.
