Going to claim against parking eye, what are the best steps?

I received a parking ticket from Parking Eye while parked in a hotel car park. I was at the hotel as I had a meeting with the hotel manager. As soon as I received the letter from Parking Eye, I sent this to the hotel manager who told me he has now cancelled the ticket from his end. Fast forward a few months and multiple threat letters later. I receive a County Court claim letter from Parking Eye.

I reply to the claim letter, stating I was there with a genuine reason and attached an email from the hotel manager (who sent me a screenshot of the parking eye portal confirming the cancellation) stating this claim is invalid and should not be pursued. A month later, I receive a County Court Judgement of £207. I called Northampton County Court who told me they did not receive the post and it could be due to the postal strikes, but because I don't have proof of postage, they can not reverse the judgement by default. They gave me two options, either I file a claim to set aside the judgement at a court cost of £275 or pay the judgement amount of £207 within 30 days and claim it from parking eye or the hotel at a later date.

I called the manager of the hotel regarding this. He told me that the hotel owners have changed from when I initially got my ticket to now and the new owners do not have a contract with parking eye. So if I was to claim against the old owners, I would not get anything as the ltd company has started the liquidation process in August 2021 and the new owner's company only started after I got my ticket. 

I spoke with the courts again, and they said you either set aside the claim at a cost of £275 or pay £207 within 30 days. He also said that you can claim against parking eye as they most likely would not have the authorisation from the land owner to start the claims process in the first place.

After trying to contact parking eye on multiple occasions, I gave up and paid the £207 judgement against me.
I now wish to claim this back but I am unsure of how to do this, and if I am able to claim anything more for the hassle and court fees?

    After trying to contact parking eye on multiple occasions, I gave up and paid the £207 judgement against me.
    Did you do that within 30 days of judgment or did you do it later and are left with a CCJ?

    I can't be absolute, but PE make very few contractual/legal errors.

    Did you do that within 30 days of judgment or did you do it later and are left with a CCJ?
    I paid within 30 days, so hoping they would remove the CCJ from my credit file

    I'm assuming they just process everything generically. This is the screenshot the hotel manager sent me. I have blurred my vehicle reg, the hotel name and a portion of the date. He said he is unable to call and ask for an update as he can not speak on behalf of the old owner and the new owner does not have a contract with parkingeye.
