Amex 3% forex fee makes it using it abroad really a bad deal (particularly for conversion outside of USD, the only currency Amex is usually competitive before the fee is take into account), especially for large amounts, and only really worth it if the welcome bonus would amply cover the charges and there is in fact no other normal spend that you could do to achieve that.
you (OP) said that “you choose” to pay at the property, implying that you had the choice to pay in advance here (in GBP). In similar scenarios I would have paid in advance and GBP.
in any case, with regards to interpretation of the value you will be paying at the property, it will be the fix amount in Euro, but will be charged at whatever exchange rate is live at the time, which could be better or worst of the indicative GBP price you have seen at time of booking.
if I were you I would use the Chase card, particularly if you are still getting the 1% cashback0 -
I have just read one of your previous post, where you stated to having a Barclaycard that could be converted to Rewards but you felt it was not worth it.
