This is absolutely caning my google storage, if I try and delete the said video from google photos it then sync's with my phone and deletes from my device too, which is extremely annoying. Any suggestions, please? I need to somehow turn off sync and automatically back up the videos only to another storage provider (like Mega) so I don't keep destroying my very small amount of google storage.

Thoughts?

Assuming you are using an Android phone and have the Google Drive and Mega apps, you can just turn off backup and sync  of video on Google Drive and enable video upload on Mega.

You can disable Backup in Google Photos - but no option to only back up Photos and not videos (that I can see)
You can also set up another Google account ( slightly different email address) and set Google Photos to back up to that account instead

I know I can turn off back up and sync, that's straight forward enough but as soon as I turn it back on again it's going to cause me to run out of storage again unless I delete the videos from my device which I don't want

If you don't want to back up to the cloud (Google's or Mega's) don't turn it back on. Back up your video to external storage, like a PC or SD card or a memory stick.

Sorry to hijack but how do you see what's taken up space?

I suspect my problem is also photos & videos. Allegedly I've used 92% of my free allowance yet when I go in to Google Drive & see what's there it's just documents and a few photos and videos. Nothing that should take up such a percentage.

I've synced Google Drive with my PC and when right clicking the folders, it doesn't add up to all that much.

So where in Google Land do I find what's taking up this space?

And as has been mentioned in the OP, if I delete it from these clouds will it end up being wiped from my phone too?

In my case it's the super duper high quality 4k videos from my phone that it's trying to backup. Check the same. Turning off sync solves nothing IMO because as soon as you turn it on again it's going to back your videos back up again unless you physically take them off the device which I don't want to do is possible

I'm missing something here, you don't want to back up your video to Google or Mega or external media, and you don't want to move the video from your phone.

So don't turn on sync, don't back it up and don't remove it from your phone.

    What's the problem?

I would guess the OP does want to backup photos, but not videos?
