Travel insurance recommendation Dubai - COVID cover?

I'm going to Dubai in March with my partner. It's going to cost around 3.5k all in, so I want to make sure I'm covered just in case either one of us catches COVID, and we can't go if there's testing going on at that time in Dubai. The hotel doesn't need to be paid till 3 days before we go, but the f;lights are 1.5k and need paying when I book (asap).
Can anyone recommend a company that'll cover us both for this scenario please?

Staysure. We've used them for a couple of years because the cruise line we go with has insisted on extensive COVID cover before they will let you on the ship.
