I've received an email offering cash back until February when I use my credit card. It looks genuine but is asking me to register for the offer. I'm concerned it could be a scam to get my card details. Does anyone know if this is a genuine offer?

I'd go to the main M&S banking site and see if you can reach the offer from there. Don't click a link in an email if you're concerned.1

Check the email address it came from, that's an easy search.
Some offers are only available from email links, however they will not ask you for your full details, you should be forwarded to a simple opt in page and maybe have to confirm your email address and nothing more.1 -
