BRITANNIA PARKING CHARGE NOTICE, AT WAITROSE IN SCOTLAND.

The following details are provided as a range for maximum anonymity.
I received a Parking Charge Notice (PCN) via post for a total sum over £90 and under £100 directly from Britannia, for my car being parked in a Waitrose in Scotland.
The letter was sent around 21 - 23 days after the car was parked there.
The letter states my entry and exit time, with a total stay of over 5 hours and under 7 hours.
There is a photo of my car entering the car park and a photo of my car exiting the car park with a clear view of my registration plate.
I am within my appeal period and would love advice on how to best approach this situation.
I will be leaving the country for minimum 12 months soon, therefore, should I ignore this notice?
I believe this isn't the best option, therefore, what would be the best way to approach this to appeal and deny any and all liability to pay this parking notice?

What did the shop manager at Waitrose say when you told him/her that you could no longer shop there now that you have discovered that a visit comes with a £95 surcharge?1

I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .

The sticky thread for NEWBIES has specific advice for motorists who live in Scotland and NI.
Plan A, the vehicle keeper should complain to the landowner and/or store manager and/or the CEO, and their SMP.
Plan B, ignore it and enjoy the rest of your life.
The above advice will change in the future thanks to your dear leader having decided to introduce keeper liability into Scotland. Until then, only the driver can be held liable, so their identity should never be revealed.
If, however, the vehicle is registered in England or Wales, then Plan B will be to appeal using the template in blue text from the NEWBIES.

I have been trying to find a contact email address for the store manager for said Waitrose, however, there doesn't appear to be any available public information on this. Write to Waitrose CEO, then?

Waitrose, the John Lewis group should know better than to employ a parking scammer who will lose them business
The mind boggles why a famous name goes to bed with a scammer
